Zone 7 has a fascinating climate profile. Your Spring baselines are incredibly close together, creating a massive “Sweet Spot” for planting, while your Fall baselines require careful navigation of the lingering summer heat.

Interestingly, the average last frost date (April 6) and the latest last frost date (April 8) in my Zone 7 data are only two days apart! This means your Aggressive and Safe planting windows overlap almost perfectly.

  • Spring Planting (Aggressive): Mar 9 – Mar 23
  • Spring Planting (Safe): Mar 11 – Mar 25
    • The Strategy: Because these windows are nearly identical, the period from March 11 to March 23 is your ultimate “Sweet Spot.” Planting during this heavily overlapped timeframe means the risk of a late frost is dropping to near zero, yet you are still getting an incredibly early start for a massive mid-summer harvest.

The Secret Fall Crop (Winter Storage)

Following the Texas A&M timeline, to get a fall harvest, you must plant exactly 14 to 16 weeks before your first fall frost. In Zone 7, this means planting in July—right in the middle of the summer heat!

  • Fall Planting (Safe): Jul 5 – Jul 19
    • The Strategy: This guarantees your potatoes will mature before the late October frosts. Because you are planting in July, applying a thick layer of straw mulch immediately after planting is mandatory to keep the soil cool and retain moisture.
  • Fall Planting (Aggressive): Jul 16 – Jul 30
    • The Strategy: This is a “Heat-Avoidance” strategy. You wait until mid-to-late July so the young sprouts emerge as the worst of the summer heat begins to break. The risk? An unexpected early November freeze might nip the plants before they fully size up.

Best Potato Varieties for Zone 7

Because you have two distinct growing seasons, you need different potatoes for each!

  • ‘Yukon Gold’ or ‘Dark Red Norland’ (Spring Crop): These early-to-mid season varieties (65-90 days) are spectacular for your Spring planting. They grow rapidly, ensuring a massive harvest of fresh, tender potatoes long before the intense heat of August arrives.
  • ‘Kennebec’ or ‘Red Pontiac’ (Fall Crop): To take advantage of the “winter storage” secret, you need mid-season varieties (80-90 days) known for excellent storage capabilities. Planted in July, these have just enough time to develop thick, protective skins in the cooling October soil before the first hard freeze.
